Nordic food culture encompasses the culinary arts of Sweden, Norway, Denmark and Finland. While specialities vary from country to country, the basis of Scandinavian cuisine is always the same: the focus is on the essentials. The awareness and appreciation of food and eating is the main characteristic of Nordic cuisine. When cooking, a lot of what thrives and grows on the doorstep is used: the ingredients are seasonal, regional and of natural origin.
This love and appreciation for food connects BRIDGE with Scandinavian cuisine. We are pleased to present this winter’s motto theme: Northern Lights.
Our new guest chef, Saku Wahlman from Finland, is taking off in the bistro and will show you the diversity of his authentic cuisine. On the menu are Nordic winter creations such as the famous Sashi Beef, roasted reindeer hooves, blinis or Finnish salmon stew. Saku and the bistro team look forward to seeing you and wish you hyvää ruokahalua (“bon appétit” in Finnish).
In the Market, food fans can look forward to authentic Scandinavian products. A voyage of discovery into the food and lifestyle world of Sweden, Finland and Norway is guaranteed with Nordic superfoods, crispbread, baked goods, preserves and lots and lots of sweets.
Our partner OFFCUT has once again provided the perfect backdrop. Nordic flora and fauna made from recycled materials offer a unique experience – Northern Lights included.
