When you think of Asian food culture, the first thing you probably think of is rice. A lot of rice. Yet Asian cuisine, which unfolds across the world’s largest continent, has a lot to offer. Asia’s diversity in terms of climate, geography and population groups is also reflected in numerous food cultures. While fish sauce, prawns and fresh herbs are used a lot in Southeast Asia, other regions use different basic ingredients.
So a taste journey through Asia is varied, diverse and colourful. And that’s the journey we’re taking you on at BRIDGE this spring: Welcome to Asian Spring at BRIDGE.
For the Asian Spring theme, our bistro team has worked with guest chef Vinh Truong – owner of Restaurant Vietnam in Zurich – to create a varied menu that is guaranteed to catapult your taste buds to Vietnam. You can try creations such as Banh Cuon (rice pockets with pork), Bun Thang (Vietnamese noodle soup), Bun Bo Xao (sauted beef) and many other popular dishes from the land of the sons of dragons.
In the Market on the upper floor, you will once again find a pop-up area with authentic products from all over Asia, right next to the Bistro. We also have new recipe inspirations for you, which you can try at Bistro and then cook at home with the ingredients from the BRIDGE Market. This way, you can enjoy Asian Spring at BRIDGE and also take it home with you.
Our scenography partner OFFCUT has created something very special for this theme. In addition to oversized vegetables from well-known Vietnamese floating markets made from recycled materials, BRIDGE will feature a video installation with images from the streets of South East Asia for Asian Spring.
